1 lb fresh carrots
4 tablespoons of butter
1/4 cup brown sugar
¼ cup white sugar
¼ teaspoon nutmeg (a pinch)
3 teaspoon cinnamon
Optional: orange and lemon
Disclaimer: This is not the healthiest way to eat carrots, but once you try them you will try to convince yourself that it is.
Step 1: Scrape the outer layer of skin off of each carrot, then slice down the middle and cut in half. If you're using baby or “snack” carrots, you can skip this step.
Step 2: Add ½ a cup of water ,carrots, butter, cinnamon, nutmeg and sugar to a saucepan or pot. If you have a lemon or orange on hand, squeeze half of the juice in the pot.
Step 3: Cover the saucepan or pot with a lid, and cook on a stovetop on low/medium heat until carrots are caramelized and tender.
Step 4: Stir and enjoy.
Inspiration:
My Granna makes these at just about every family dinner. We usually eat them as a side dish with rice, broccoli and salmon.
Mom Pro Tip:
I would not recommend introducing carrots, as you don’t want your kid to think this is how they're supposed to taste. I would start with roasted or steamed carrots (pureed for the babes), then transition to these. However, if you have a picky eater, these will be hard to deny! Recipe for roasted carrots coming soon!
