Roasted Glazed Chicken with Brussels and Sweet Potatoes


Ingredients


4 chicken thighs

1 pound of brussel sprouts

1 sweet potato

1 tablespoon of garlic

1 tablespoon of paprika 

1 tablespoon of italian herbs

1 tablespoon of Adobo 

½ teaspoon of pepper


Glaze:

½ cup of brown sugar

½ cup of balsamic dressing (or just balsamic vinegar)

2 tablespoons of olive oil



Step 1 (prep): Preheat the oven 425 degrees. Peel and cut sweet potatoes, clean chicken and pat dry, cut the stems off of the brussels, and cut a few brussel sprouts in half if you have toddlers (they will cook through more making them softer and easier to eat). This process takes all of 5 minutes. 


Step 2: Spray 9x13 glass baking dish with cooking spray. Place chicken in the baking dish, and spread veggies evenly around the chicken. Season the chicken and veggies evenly. Then pour the glaze over the chicken and veggies.


Step 3: Roast in the oven uncovered for about 45 minutes and you have dinner for 4. 









Inspiration:


I LIVE for any one pan/pot recipe, and this one is no different. Weather you plan on knocking out some household chores, responding to a few emails, or relaxing on the couch with a glass of wine, this is one of those easy meals that you can just throw in the oven and chill until it’s done. I like meals like this when I have to entertain company, because I don’t have to be stuck in the kitchen the whole time. 


Working mom protip:


As a single, working mom who gets home around 5:00 everyday, maximizing productivity is a MUST! I always say this, but MAKE EXTRA! When you make extra, you can repurpose the leftovers for another meal later in the week.


 If you want to make this meal more convenient, complete step 1 in the morning before work. Cover it with foil (or a lid if you have those fancy dishes) and place in the fridge. When you get home from work, preheat the oven as soon as you walk in. Once you’re settled, complete steps two and three. Don’t forget to remove the foil. While dinner is in the oven, throw a load of laundry in the wash too. Now you can play a game or read a book with your little one, all while “cooking and cleaning”.
