Three Step Cajun Cauli-Rice

This is the easiest, fastest side dish recipe. It’s Keto (low-carb) and a great way to sneak veggies in with the kids. Sometimes I add shrimp and broccoli, when I want to make it into an entree. 


1lb of ground sausage ( I use Delia’s chicken sausage, sometimes link sausage and sometimes ground sausage. Use what you have on hand.)

½ chopped red bell pepper

½ chopped green bell pepper

½ chopped purple onion 

2 tablespoons of minced garlic 

1 bag of riced cauliflower (if frozen, let thaw)

3 tablespoons of cajun seasoning ( if you’re extra like me, and have these on hand, make your own cajun seasoning with the following ingredients: smoked paprika, garlic powder, onion salt, ground pepper, cayenne pepper, oregano, thyme, red pepper flakes) 

1 teaspoon of salt and pepper

1 tablespoon of dried parsley 

2 tablespoons of olive oil 


Step 1: Heat stove on medium high heat. Drizzle olive oil in a large pan or wok, and add sausage, onion, bell peppers and garlic. If you want to add more veggies, this is when you would add them. Sometimes I like to add broccoli when I'm eating this dish as a meal.


Step two: After the sausage is almost fully cooked, add riced cauliflower and  seasonings. Stir and cook for about 10-15 minutes. This is the step that you would add shrimp if you wanted.


Step three: Enjoy as a side dish or meal!
